I typically only work with 4/4 (1" thick) lumber as 8/4 (2" thick) hardwood can be quite costly. I've made this style of board before all with 4/4 oak and it's always been a hit so when I saw my supplier got in stock of 8/4" white oak, I submitted to my temptation to get some and the final results did not disappoint. I love the way the end grain looks in the thicker boards. White oak is an excellent wood to use in a cutting board as it's a closed pore wood. Unlike red oak which is an open pore. A few years ago I built a big board entirely out of reclaimed white oak and it's still in my kitchen getting used nearly every day so I can attest to the longevity and durability of an oak board.
